Wild Mushroom Stuffing with Herbed Pinot Jus

Ingredients:

1 loaf rustic bread, cut into 1-inch cubes (stale or lightly toasted)

1 lb mixed wild mushrooms (shiitake, cremini, oyster), roughly chopped

2 tbsp butter + 2 tbsp olive oil

1 large shallot, minced

3 cloves garlic, finely chopped

1 tbsp fresh thyme leaves

1 tbsp chopped rosemary

1 cup chicken or vegetable stock

Salt and pepper to taste

Optional: grated Parmesan or pecorino for garnish

Sauté the mushrooms: Heat butter and olive oil in a large skillet. Add mushrooms, shallot, and garlic. Cook until the mushrooms are golden and fragrant.
